I get Food and Wine magazine delivered to me. Eddie loves eggplant. I saw this recipe and thought “I have to make this”. It was the best eggplant dish I’ve ever made. It’s a must try. Just make sure you grill the eggplant. I made this a second time, I forgot to grill the eggplant (don’t know what I was thinking). While it was good, it was not AS good.
