These I made after going to the local Produce stand around the corner from my house. I love this little place. It is in the front yard of a farm house. They have fresh produce, fresh brown eggs, and fresh honey…all from their home farm right there. If you live near by you need to check it out. Tools you will need are: Grill pan (or outside grill), sheet pan (and foil or parchment paper if you want to line the pan), a small spoon or melon baller, medium bowl, and spatula.
Ingredients you will need: Fresh Zucchini, a small container of Ricotta, a little bit of leftover tomato sauce (or you can open up a small can of tomato sauce and season it up), a bag of shredded low-moisture mozzarella cheese, Parmesan cheese, fresh basil diced, and you can add toppings if you’d like. Oops, don’t forget you’ll need some Olive Oil as well.
Given that I was making this for just Eddie and I, I used 2 zucchini. I cut them in half length-wise and scooped out the middle into a medium bowl. I put a little olive oil on the skins and grilled them on a preheated grill pan. Meanwhile, I added some Ricotta cheese, minced garlic, salt, and freshly ground black pepper to the zucchini insides in the bowl. I mixed it together. When the zucchini was grilled to my liking, I placed them on a sheet pan. I filled each zucchini with the filling, followed by a little left over tomato sauce and some shredded mozzarella cheese. Then I sprinkled a little Parmesan cheese. Next, I put the sheet pan in a preheated 350 degree oven. I baked them until the cheese was melted and had a little bit of brown bubbly cheese on top. Lastly, I topped it with diced fresh basil. I served these with some breaded pork cutlets, a salad, and of course some One Hope Red Blend.
